RECIPE OF THE WEEK










This week's recipe is brought about by some research I did on an item I just listed on my website. I had fun learning about "Rumtopf" and thought I would share the recipe here with my blog-readers. I found the recipe below at the My Recipes blog. Enjoy!

Rumtopf (Rom Pot)

Rumtopf, the German delicious fruit preserve. Traditionally part of German Christmas celebrations. The fruity liqueur can be drunk in glasses, and the fruit and liqueur are excellent over vanilla ice cream. It is traditional to begin with the first fruit of the summer season (typically strawberries).

However, fresh fruit and certain berries are available all year in supermarkets. Do not use blackberries or blueberries. They can be bitter and discolor the other fruits and berries. Watermelon can make the mixture watery. Rhubarb can make the mixture sour. Bananas are too mushy. Citrus fruits are too acidic. The fruit should be ripe, but not overripe. Look at it, look at the berries! Remove any damaged parts and pit or core it before measuring. Cut larger fruits into smaller chunks.

INGREDIENTS:
* 1 large jar with a lid
* 5 kg (5000 g) fresh fruits and berries
* 3 l (3000 ml) granulated sugar
* 75 cl (750 ml) rom

METHOD:
1. For instance, start with the strawberries, weigh them.
2. Cover with half as much sugar
3. Allow to sit for an hour.
4. Pour in enough rum to cover the fruit.
5. As space allows and as different fruits and berries come into season, add more fruits, berries, sugar and rum in the appropriate proportions, as described.
6. When ready, allow the entire mixture to sit for some days.
7. Then stir the fruit and berries gently.
8. Cover the jar with a clean film and a lid.
9. Store in a cool place away from heat and sunlight for at least 4 weeks (or 2-3 months).

If the fruit develops any mould - THROW IT OUT ! To prevent spoilage, you can keep the mixture acidic with lemon juice or ascorbic acid (vitamin C powder).

Recipe of the Week is back again!

After taking the summer off from posting my Recipe of the Week, I'm back! This recipe comes from a dear friend, Jan, in North Carolina......sounds wonderful and I can't wait to try it out!

BUFFALO WING CHICKEN DIP

2 large cans of chicken breast meat, drained and shredded
(or two large cooked chicken breast shredded) Costco, BJ's or Sam's Club size cans

Place in pie plate. Pour Buffalo Wing sauce over the chicken to coat it good.

Then place a layer of sour cream over the chicken and a layer of Mexican cheese to coat over the sour cream.

Place in preheated 350* oven for about 10-15 to melt the cheese and get it hot. Let rest about 5 minutes to cool a tad.

Have a large bag of Frieto-Lay Scoops on hand. Eat and enjoy.

RECIPE OF THE WEEK


Yummy Easter Cake
This cake is so good and very easy to make......makes a great dessert for Easter dinner!

1 pineapple cake mix (not pineapple upside-down cake)
1 med. can crushed pineapple
1/3 cup cooking oil
3 eggs

Mix together and beat for 3 minutes with electric mixer. Pour into 9x14" pan that has been greased and floured lightly. Bake for 30 minutes at 350*.

Frosting: 1 can of Buttercream Frosting to which 3/4 cup of Angel Flake coconut has been added. Spread on cooled cake and enjoy!

Note: For an Easter touch, tint icing with your favorite food color and add Easter decorations on top of cake.

RECIPE OF THE WEEK


Quick and Easy Italian Cream Cake

Nothing takes the place of a homemade-from-scratch Italian Cream Cake, but if you don't have the time for that here is a quick and easy way to get a delicious dessert in half the time.

Preheat oven to 350*; grease and flour two or three round cake pans (depends on size of pans).

Ingredients:
1 box white cake mix (extra-moist or pudding in the mix)
1/2 cup chopped walnuts
1 cup flaked coconut

Prepare cake mix according to directions on box. Add walnuts and coconut and pour into prepared pans. Bake according to directions on box. Remove from oven and let cool.

Icing:
1 can Vanilla Cream Cheese Frosting
1/2 cup chopped walnuts
1/2 cup flaked coconut

Mix together and spread between layers and on top and sides of cooled cake.

Enjoy!

MAKE MINE PINK COOKIE EXCHANGE




TEA COOKIES

This recipe was given to me by Sharon Stout, a lady I had the pleasure of working with in Oklahoma City in the late 1970s. They are a delicious shortbread type cookie and are wonderful with a cup of your favorite hot tea.

Mix well: 1 cup margarine
1 cup sugar
2 eggs
1 tsp. vanilla

Add: 1 T. water
3 tsp. baking powder
3 cups flour
1/2 tsp. salt

Roll out on floured board and cut with cookie cutter. Bake at 375* until lightly brown, about 10 minutes. Makes 4-5 dozen small cookies.

RECIPE OF THE WEEK


EASY TAMALE CHEESE DIP

This recipe is a hit with my family, especially the men, and it's super easy to prepare.

Ingredients:

2 lb. box of Velveeta cheese
1 can tamales, unwrapped
1 can Rotel tomatoes and green chilis

Cut Velveeta into chunks and place in a microwave safe bowl. Add Rotel. Microwave until cheese is melted, stirring at 3 minute intervals. Add tamales and stir until smooth. Keep warm in a crockpot on low setting. Serve with tortilla chips.

Note: This can also be made in the crockpot.

RECIPE OF THE WEEK


15-Minute Chili

I got the original recipe from a wonderful healthy-living website called SparkPeople and adapted it to my family's taste. This is a quick, easy and delicious main dish your family will enjoy now that it's starting to get cooler outside!

1 pound ground turkey
1/2 cup chopped onion
1 16 oz. can pinto beans, drained and rinsed
1 16 oz. can northern beans, drained and rinsed
1 24 oz. can chopped stewed tomatoes
1 tablespoon chili powder
1/2 tsp. garlic powder
1/2 cup salsa

1. In a large pot, brown turkey with chopped onion.
2. Add beans, tomatoes, garlic, chili powder, and salsa to turkey mixture. Cook until hot.
3. Top with a dollop of sour cream and serve with cornbread if desired.

Makes 4 servings.

Recipe of the Week



Tropical Poke Cake


Ingredients:
1 yellow cake mix
20 oz. can crushed pineapple
3 eggs

Mix these three ingredients together well and pour into a greased and floured 9x13 pan. Bake at 350* for 30 minutes or until done.

Remove from oven and poke holes in the cake about 1 inch apart with the tines of a fork. Pour a can of sweetened condensed milk over top of hot cake spreading evenly. Top with 1 cup shredded coconut and 1/2 cup of chopped pecans. Place under broiler for about 2 minutes to toast the coconut and nuts. Watch closely so the topping doesn't burn. Let cool and enjoy!
